■INGREDIENTS (serves 4)
2 fillets mackerel
2 fillets mackerel
1 naga-negi onion
Fine strips of naga-negi onion
☆sauce 1☆
1/2 U.S. cup water
☆sauce 1☆

3 1/2 Tbsps sake
3 Tbsps sugar
3 Tbsps miso
★sauce 2★
1 Tbsp soy sauce
2 Tbsps mirin sweet cooking sake3 Tbsps miso
■DIRECTIONS
1. Cut the mackerel into bite-sized pieces. Make a cross-shape incision on the skin surface of each mackerel piece. Blanch the mackerel by first plunging it into hot water, and then soaking in chilled water with ice.
2. Cut the naga-negi onions into 1 1/2 inch lengths.

3. Place the ☆sauce 1☆ in a frying pan, and bring to the boil. Put the mackerel pieces with the skin side facing up into the frying pan, boil briefly and add the soy sauce.
4. Mix the ★sauce 2★ in another pot. Take some liquid out of the frying pan in which the mackerelwas simmered, add to the mixture of ★sauce 2★ and stir well. Add the chopped naga-negi onion. Cover the frying pan and boil them over a medium low heat for about 10 min.
5. Arrange the mackerel and naga-negi onion in a bowl, pour over the simmering liquid and garnish with fine strips of naga-negi onion.
